Oatmeal biscuits!

Oatmeal biscuits with dried fruit and seeds are one of my favourite sweets! 😊

Healthy and delicious at the same time 🙂 !

These biscuits are perfect if you want to stay fit 🙂 but at the same time enjoy a delicious treat! They are rich in fiber, omega 3, vitamines, so good ingredients!

I love to have them for ex. with tea, as an afternoon snack. It’s my own recipe :), there are quite a lot of ingredients, but I promise you, you won’t be disappointed ! 🙂 I hope you love them as I do 🥰!

Here are the ingredients!

  • 100 g. rolled oats (also gluten-free)
  • 50 g. oat flour (also gluten-free)
  • 20 g. fine coconut flakes
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 70 g. plant based milk
  • 1 tbsp. flaxseed or chia seeds
  • 10 g. date sugar
  • 20 g. coconut sugar (If you do not have these sugars it’s also okey with brown cane sugar, or honey!)
  • 50 g. loose coconut oil
  • Dried fruit such as cranberries or raisins and seeds (how much you want…)

If you want to have more biscuits just doubles the amount of ingredients like 200 g. of rolled oats instead of 100g.

How to bake the biscuits!

Step one: Pour all the dry ingredients in a bowl. Rolled oats, oat flour, fine coconut flakes, cinnamon, baking powder and the salt! Blend!

Step two: In another bowl pour the flaxseed with the plant-based milk, loose coconut oil, date and coconut sugar! Blend.

Step three: Pour the wet ingredients into the dry ingredients and blend. Combine the dried fruit and seeds with the batter and then stir again!

The mixture should be quite dry but at the same time a moulding mixture, if that’s not the case add a bit more of oat flour!

Step four: Make the biscuits, shaping the dough in your hands, palms of your hands. The cookies will not rise that much, so you can also form a cm thick biscuits.

Step five: Bake for 15 min. about 180 degrees in a static oven and preheated.

Once baked, let them cool for a few minutes and afterwards transfer them on a wirerack to let them cool down completely!

Then enjoy! I recommend you to eat them, together with a good cup of tea or coffee!
